In many countries including Latvia July 11th is celebrated as a very special Chocolate day! So today, the day before Chocolate day, i want to share with you all a tasty and light banana bread brownie recipe, cause i do believe that chocolate is one of the best things in a food world and it definitely can give a sense of happiness and enjoyment.
In Latvia banana bread isn’t very popular and i hadn’t tried it either, because sometimes the most natural banana gives some kind of synthetical taste and i was a little bit afraid of that. But this time few overriped bananas was waiting their turn and i was dreaming about some good brownie. So i made banana bread brownie with mild, light and fresh taste. To my joy bananas taste wasn’t very expressed. I added coconut crumb for some crunchiness and nutty taste.
If i made this brownie as a treat, i would definitely add rich dark chocolate glaze (as in the top photo – added to this post in the May 2020), but this time we ate it with condensed cocoa milk and this combination was just delicious!
BANANA BROWNIE INGREDIENTS:
- 2 bananas, preferably overriped
- 2 eggs
- 100 ml greek or other plain yogurt
- ~70 ml honey
- 1 teaspoon vanilla exract or vanilla sugar
- 1 teaspoon soda
- 200 ml flour
- 50 ml cocoa powder
- 50 ml coconut crumb
- 50 ml chocolate chips
PREPARATION:
- Mash bananas with fork, but if they are really overriped, just put them in mixer.
- I have mixer with a stand (and it is one of the best gifts from my husband!), so i leave it running on slow speed and add all ingredients one by one.
- Pour mixture in a cake form (i always suggest silicone form, because it doesn’t require greasing and it is easier to take the cake out).
- Bake in 180C oven for 45 min to 1 hour.
- Check with wood stick – brownie is ready when it is just a little bit sticky, but doesn’t taste like flour.
- Preferably glaze with dark chocolate!
