3 fast and healthy recipes for lunch

I don’t know about you, but during summer we tend to spend much time outdoors and what comes with that is no time for preparing serious lunch. Not that i would want to make any serious food either. Lunch usually is some fast improvisation of what we have on hand and few times a week Toms chooses Milzu! cereal with milk or some muesli with yogurt. So i decided to share 3 of our fast lunch options which our toddler enjoys (well sometimes he is full already while tasting each ingredient seperately).

 

* recipes are for 1 adult and 1 kid.

1. SUMMER SALAD WITH EGG (15 min)

  • handful of lettuce mix- whatever you have
  • 1 short cucumber
  • 1 big tomato
  • spring onions or onion
  • 2 boiled eggs
  • little bit salt and pepper

Sometimes i add:

  • cottage cheese
  • 1 pickled cucumber (in this case don’t need to add salt to salad)
  • tuna in oil

While eggs are boiling, wash and cut vegetables. Cool down eggs just little bit, cut and add to salad. Thats all!

2. BUCKWHEAT FLAKES WITH SIDE DISH (5min)

  • buckwheat flakes 100ml
  • water 200ml
  • avocado
  • curd with sour cream or greek yogurt
  • spring onions and/or other greens

For variation:

  • time to time i replace curd with Benedict’s egg

Pour buckwheat flakes into boiling water and boil for 3 minutes. Slice avocado, chop spring onions and mix curd with sour cream. Ready!

3. BUCKWHEAT, LENTIL AND ORANGE SALAD (20min)

  • green buckwheat 100ml
  • red lentils 50ml
  • water 300ml
  • orange 1
  • ripe avocado 1/2
  • grapeseed oil 2t/k
  • basil a pinch
  • salt a pinch

For variation:

  • try replacing buckwheat with bulgur or couscous

Boil together 300ml water, buckwheat and lentils. When start to boil, take 10 to 15 min, add salt. While boiling, take salad bowl and mash together avocado with oil and basil – that will be dressing. Peal the orange and cut each segment in 3 parts. Pour buckwheat and lentil mix through strainer, rinse if you want and add to avocado dressing. Add orange and serve.

Katliņā ielej 300ml ūdeni, uzreiz ieber griķus un lēcas un no vārīšanās brīža vāra vēl 10 līdz 15min, pievieno sāli. Pa to laiku salātu bļodā saspaida avokado ar eļļu un baziliku – tā būs salātu mērce. Apelsīnu nomizo un katru daiviņu sagriež 3 daļās. Nokāš gatavos griķus un lēcas (var arī noskalot) un ber salātu bļodā pie mērces. Pievieno sagriezto apelsīnu un pasniedz.
